Fresh Minty Tomatoe Salad

 

1 cup Red Wine or Sherry Vinegar
1Tbls honey
2 Tbls olive oil
S&P
4 Tbls minced/chopped fresh mint
1/2 melon (pick your favorite!) or peaches or ...
5 ish Tomatoes (multi colored heirloom are wonderful!!)

 

Make dressing and toss in melon and tomatoes!
Garnish with Mint flower if you have!!
Refrigerate for a while to meld flavors!!
