Grilled Cantaloupe and Prosciutto
Grilled Cantaloupe and Prosciutto


Salt and Sweet


1 cantaloupe seeded and sliced in 1" sections
1/4 lb. prosciutto sliced thin
Olive oil for brushing
Fresh mint jullianed, for sprinkling
Honeyed Ricotta (see SAUCES for Recipe)


Preparation Directions
Pre heat grille med high. Cut slices of cantaloupe in half horizontally. Cut prosciutto slices in half vertically. Wrap each section of cantaloupe in the 1/2 slice of prosciutto ( it goes around more than once). Brush with olive oil then sprinkle with a little salt and pepper. Grill both sides till nice grill marks apear and prosciutto is a little crisp. Serve with a sprinkle of mint on top and for a special touch with Honey Riccotta on side for dipping ( not necessary...delicious on its own!)
